As the weather gets warmer I start craving all the cool and refreshing eats. Especially when I get home from teaching hot yoga. I totally love smoothies but I’ve honestly always been more of a fan of smoothie bowls. There’s something a bit more satisfying about eating your food versus slurping it. And I also love any excuse to eat granola.
This recipe is the perfect morning treat as it includes Argentinian Yerba Mate for a caffeinated boost. Yerba mate also contains antioxidants (more than in green tea!) as well as B vitamins, vitamin C, zinc, potassium and manganese.
I also like that it packs a real punch with protein + probiotics from the yogurt, a dose of greens from the kale as well as healthy fat from the avocado. And it’s really really easy to make.
Cold brewing yerba mate is super easy: mix 1 tablespoon of tea leaves and 12 oz of water in a glass container and cover. Leave in the fridge overnight. Strain in the morning before blending everything together
Yerba Mate Breakfast Smoothie Bowl
Ingredients
• 1 cup of cold brewed Argentinian Yerba Mate
• 1 apple, cut up
• 1 container of yogurt (I used a dairy-free one)
• 1/2 avocado, cut up
• handful of leafy greens (I used kale but also love spinach in my smoothies. You won’t taste it, promise!)
• a few shakes of cinnamon
• granola
Directions:
Blend all ingredients together, minus the granola, until smooth. Serve in a bowl and sprinkle granola (and maybe some cinnamon and a drizzle of nut butter) on top. Enjoy
